Choppin Series comes from the Canet Estate, which is located in the highest altitude area where coffee is grown in Tarrazu, Costa Rica. This area is the most densely planted fruit area in Costa Rica. The owner of the estate mainly grows passion fruit, and the amount of coffee is quite scarce. Only a specific area grows coffee special care is required. All coffee cherries are picked by hand, and only ripe red cherries are picked. After harvesting, they will go through a screening process before processing, and the underripe or overripe beans will be screened again.


In recent years, anaerobic fermentation has become popular, but in fact, anaerobic fermentation has been practiced in Costa Rica for many years. Through post-fermentation, it provides unrestrained fruit tonality and sweetness of jam. This batch underwent anaerobic solar fermentation for 72 hours and sun-dried on African trellises for 15 days.


F1 is a new variety developed by the French research organization CIRAD in Costa Rica in recent years. F1 is a mixture of Villa Sarchi+Sachimor and Sudan Rume. In addition to the traditional Central American Villa Sarchi flavor, it also has African flavors. Citrus flavor of the variety Sudan Rume.
