Description:
This washed, anaerobic coffee with the variety Colombia comes from the Buenos Aires farm run by Andres Quinceno. The farm is located in the Risaralda region, near the city of Santa Rosa, and covers an area of 6 hectares. The so-called "Culturing" is a fermentation process in which fruits, aromatic plants, and spices are used to ferment together with the coffee. Starter cultures are used that are rich in microorganisms such as lactobacilli and yeast to add complexity to the taste and aroma of the coffee. After the coffee has been harvested and the pulp removed, it undergoes a 180-hour anaerobic process and is then dried in the sun for 18-22 days.
